Once, I went on a weeklong cavalcade into the mountains with some other boy scouts as part of a high adventure campaign. Basically, we rode out with nothing but what we could store on our horses and remained in the wilderness the entire week, traversing a mountain range. Each boy responsible for his own mount's care throughout.

It was quite something, although at one point I was dismounted. Something spooked the horse, and it shot off at lightning speed up the mountain side off the beaten path, and directly under a limb. It must've looked like something straight out of a cartoon, but fortunately I came down smoothly and was able to recover quickly, because the horse turned and reared, dropping hundreds of pounds of weight on my water bottle inches away. It was a Nalgene, though, so it was undamaged. I scurried back down the slope and regrouped with the others rather than try to calm the horse on my own.

Like, everyone has to take math but you can either do long basic math or advanced math, advanced being 9 or 10 courses instead of the basic 6. The same applied to most subjects - some mandatory classes (usually just one) and a ton of advanced classes if you liked it.
Languages were purely elective and you had options depending on school. I had English, German, French, Russian, Spanish and Latin.
Then you had to take at least four for your finals

Health class was the usual meme option since the 'advanced' course was three classes instead of like 6+.

I also shoved all gym classes into the same quarter meaning I had 10 hours of gym per week.

In Belgium, high school classes aren't elective, rather we get to choose from a package of subjects. So if you were good at languages, you'd choose the course that focused on languages, or if you were good at maths you'd take the course that had more math related classes in it. Personally I took a trade oriented package, which was a economics/language hybrid. Last two years of high school I switched to a course that focused on tourism, which meant a little less focus on economics, but a bigger focus on languages, history and geography.

For the record, there's no distinction between Middle and High school here. High school just lasts 6 years.
